Lemon Popsicles with Sheep and Goat Whey

Lemon Popsicles with Sheep and Goat Whey
Ingredients:
- 1 cup fresh lemon juice (about 4-5 lemons)
- 1/2 cup water
- 1/4 cup honey or maple syrup (or more, depending on your sweetness preference)
- 1 scoop (about 30 g) sheep and goat whey protein
- 1/2 cup yogurt
- 1 teaspoon lemon zest (optional, for more intense flavor)
- Popsicle molds and sticks
Instructions:
Mix the Liquids: In a large bowl, mix the fresh lemon juice, water, and honey or maple syrup until the honey/syrup is well dissolved.
Add the Protein: Add the sheep and goat whey protein and mix well until the mixture is smooth.
Add the Yogurt: Add the yogurt and lemon zest (if using) to the mixture and stir until smooth and creamy.
Pour into Molds: Pour the mixture into the popsicle molds. Insert the sticks into the molds.
Freeze: Place the molds in the freezer for at least 4 hours or until fully frozen.
Serve: To remove the popsicles from the molds, run the molds under warm water for a few seconds. Enjoy immediately!
Tips:
This recipe for Lemon Popsicles makes about 6-8 popsicles, depending on the size of the molds you use.
Most standard popsicle molds hold about 80-100 ml (3-3.5 oz) each.
