Recipe – Cold soup with Cucumbers & Goat Milk
Ingredients:
- 2 large cucumbers, peeled and chopped
- 1 cup water
- 3 tablespoons Aria powdered milk
- 1 cup yogurt
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 garlic clove, minced
- 1 tablespoon dill, finely chopped
- Salt and pepper, to taste
- Ice, optional
Instructions:
Preparation of Milk: In a small bowl, mix the powdered goat milk with water until dissolved. Since cucumbers also contain water, no additional water is needed.
Blender: Place the cucumbers, dissolved milk, yogurt, olive oil, lemon juice, garlic, and dill in a blender.
Mixing: Blend all ingredients until the soup is smooth and homogeneous.
Taste: Add salt and pepper to taste. Blend again for a few seconds.
Chilling: Put the soup in the refrigerator for at least an hour to chill well. If you want to serve it immediately, you can add some ice cubes and blend again.
Serving: Serve the cold soup in bowls or glasses. Garnish with a bit of extra dill or thin slices of cucumber if desired.
This recipe makes about 4 servings.
